Growing up in Corbin, Kentucky we grew lots of sweet potatoes. So, mom and granny figured out numerous ways to serve them up to us! We loved the sweetness they had, partially because every recipe included brown sugar! This one is inspired by the old “twice baked potato” concept. These have a unique presentation that everyone appreciates. Once you have made this recipe, the old sweet potato casserole will never do again!

INGREDIENTS FOR OUR HOMEMADE BAKED SWEET POTATO BOATS RECIPE
- Sweet Potatoes
- Brown Sugar
- Cinnamon
- Butter
- Marshmallows
HOW TO MAKE OUR TWICE BAKED SWEET POTATOES BOATS
Preheat oven to 425 degrees.
Pierce sweet potatoes all around with a fork
Bake at 425 for 1 ½ hours.
Remove from oven and allow to cool until comfortable to handle.
Split each potato lengthwise.
Scoop out fleshy portion of potato, leaving about a ¼ “ of the skin and place the flesh in a mixing bowl.
Return hollowed out skins to the skillet.
Mash and blend the flesh with brown sugar, cinnamon, and butter.
Spoon the potato mixture back into the skins.
Top the sweet potatoes with marshmallows.
Bake at 350 for 10 minutes or until marshmallows are lightly browned.

- 4-5 Sweet Potatoes
- ½ cup Brown Sugar
- 1 tsp Cinnamon
- ½ stick Butter softened
- 1 cup Marshmallows
Instructions
- Pierce potatoes all over with fork.
- Bake in 425 oven for 1 ½ hours.
