Being from Corbin, KY, we always enjoyed “Southern Comfort Food”, Skillet Salisbury Steak was one of our favorites. It was always tender, delicious, covered in brown gravy, and typically served with mashed potatoes. When we saw that skillet filled with Salisbury Steaks and gravy, it got your mouth watering… just begging to be eaten!

INGREDIENTS FOR Poor Man's STEAK RECIPE
Patties:
- Lean Ground Beef
- Egg
- Bread Crumbs
- Onion Powder
- Garlic Powder
- Ketchup
- Worcestershire Sauce
- Salt & Pepper
- Butter
Gravy:
- Butter
- Flour
- Worcestershire
- Onion Powder
- Garlic Powder
- Beef Stock
- Sliced Mushrooms
How to make our hamburger steaks
Combine all patty ingredients in a large mixing bowl and massage with your hands until the ingredients are fully merged.
Form into 4 patties.
Heat 1 tablespoon of butter in a large skillet over medium heat.
Cook patties in a skillet over medium heat for 3-4 minutes per side until browned.
Remove patties from skillet and set aside.
Lower temperature to low.
Add butter to skillet with grease from patties.
Blend into the skillet the 3 tablespoons of flour and brown into a rue.
Cook rue for several minutes.
Add Worcestershire, Onion Powder, and Garlic Powder and continue to blend.
Gradually whisk in the Beef Stock with the rue, forming a liquid.
Raise temperature to medium high and bring to a boil.
Add sliced mushrooms and return patties to skillet.
Simmer 5 minutes over medium heat until gravy thickens.

Patties:
- 1 lb Lean Ground Beef
- 1 Egg
- ⅓ cup Bread Crumbs
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tbsp Ketchup
- 1 tbsp Worcestershire
- ¼ tsp Salt
- ¼ tsp Pepper
Gravy:
- 2 tbsp Butter
- 3 tbsp Flour
- 1 tbsp Worcestershire
- ½ tsp Onion Powder
- 1 tsp Garlic Powder
- 2 cup Beef Stock
- 2 tbsp sliced Mushrooms
Instructions
- In a large bowl, combine all patty ingredients and mix with hands until incorporated.
- Form into 4 patties.
- Cook in a skillet over medium heat about 3 minutes per side until browned.
- Remove patties to a plate and set aside.
- Add butter to skillet and allow to melt.
- Add flour and whisk to form a roux.
- Cook roux for several minutes.
- Add worcestershire, onion powder and garlic powder while continuing to whisk.
- Gradually whisk in beef stock to blend in roux to liquid.
- Raise temperature to medium high and bring to a boil.
- Add mushrooms and return patties to skillet.
- Simmer 5 minutes over medium heat until gravy has thickened.

Thank you for posting this. I've been looking for a Salisbury Steak recipe. Just FYI, the word is roux, not rue.
