Being from Kentucky, we always had “Southern Comfort Food”, Old Fashioned Meatloaf was one of our picks. It was always tender, delicious, covered in our favorite ketchup, and usually served with mashed potatoes. When we saw that skillet with that ketchup covered meatloaf, we couldn’t wait to start eating … it looked delicious!

INGREDIENTS FOR SKILLET MEATLOAF RECIPE
- Ground Beef (we prefer a lean mix of 80/20 or 73/27)
- Saltine Crackers
- Onion diced
- Egg
- minced Garlic
- Salt
- Black Pepper
- Ketchup for covering the top
HOW TO MAKE GROUND BEEF MEATLOAF
Preheat oven to 400 degrees.
Put ground beef in a large mixing bowl.
Crush saltine crackers into the bowl.
Toss in the diced onions.
Add garlic.
Next, add salt and pepper.
Add an egg.
Mix with hands until well combined.
Form into a loaf and place on the skillet and put in the oven for 1 hour.
Remove from the oven and cover the top of the meatloaf with ketchup.
Return to oven for an additional 10 minutes.

After cooking for 1 hour. Then you put on ketchup and cook another 10 minutes.

I don't have a cast iron with the grate on the bottom. Would it be okay to use a regular cast iron or a griddle pan without the sides?

Yes, I would use the regular skillet, just to keep any grease from dripping into your oven.
