Being from Corbin, KY, we always loved it when we got to go fishing with dad. One of the best parts was delivering that fresh-caught fish to mom, where she would gut and filet it. She varied in her coating selection, from corn-mill to battered. We loved the battered option because that meant we got to eat a ton of the batter that was leftover, mom always dripped the batter into the lard to create those glorious crumbs!
In the country, you wasted nothing, including the excess batter. The typical side dish for us was our Southern Macaroni and Cheese… which it still is today when we cook fish. Our kids are no different than we were, they love the crumbs, so we always make the extra batter and fry up those delightful golden crumbs.
We honestly love Long John Silver’s, so creating this batter was a must! Our batter is the magic in this recipe. If you’re a tater sauce person, then our Homemade Tartar Sauce is the ticket. - Cod Filets
- Flour
- Cornstarch
- Baking Soda
- Baking Powder
- Salt
- Sugar
- Onion Powder
- Garlic Powder
- Water
DIRECTIONS FOR FISH JUST LIKE LONG JOHN SILVER’S RECIPE
Combine dry ingredients in a bowl and mix well.
Add water and stir until well combined.
Heat oil to between 360 and 375.
Dip fish in the batter to coat completely.
Deep fry for until golden brown (about 3 minutes per side).
Sprinkle with Salt

Hi Dorothy, We tried to get as close as we could. Unfortunately LJS doesn't share their recipe so we did our best. For awhile we were living where there wasn't one around. So this was as close as we could get to the real thing.

I've not tried this Recipe just yet. But I think LJS has Lemon in their batter. So maybe some powdered Lemon rind or maybe even a little lemon juice in the batter as part of the liquid.

found the missing ingredients after a LONG SEARCH HERE they are......1/8 t paprika and instead of water use 3/4 c of club soda; I used lemon flavored seltzer to get a slight lemon after taste also tried grapefruit seltzer. it was o.k. both were zero calories

Fried fish will never be the same at our house. This was so yummy, crunchy crust and well seasoned. I used Tilapia fillets, added 1 teaspoon of lemon juice to the batter along with a sprinkle of paprika and dill weed, because I love it so. The batter was sick so I added a bit more water until it was easy to dip the fish fillets in before frying them in a frying pan with about an inch of canola oil heated and ready to go. The fish was crispy because of the batter and tender inside. This will be our go to fish fry from now on. Thank you so much for sharing this with us.

My fish didn't turn right. This was my first time frying this kind of fish with batter. I used frozen cod but thawed it out before and used peanut oil to fry it in a cast iron pot. I didn't pat it dry before dipping it in the batter. What did I do wrong?

Patting dry before dipping in batter makes it more likely to stick to the fish. Also, I don't typically use peanut oil.
