Being from Corbin, Kentucky, we regularly had the pleasure of Soup Beans, Cornbread, and some crispy Salt Bacon. With a tight budget, mom often picked up pinto beans at the Piggly Wiggly. Making southern beans is an all-day process. It’s easy to make, but the beans MUST soak overnight, and they must be cook for several hours to allow them to become tender. As adults, like most southern folks, we only trust this recipe to our family to make. I’ve only tried soup beans once at a restaurant and they were so tough, the cook clearly didn’t take the proper amount of time preparing them. This is a family dish that can cause a flood of memories from a time long past. For us, that means thoughts of being in Granny’s kitchen!
In the South, we enjoyed beans and Cornbread all year-round. Most folks today have never experienced true Southern Beans. Relax and cook a nice easy batch this Fall or Winter… everybody needs a good Southern treat. Serve a large bowl along with White Cornbread or Skillet Cornbread for a filling meal.
INGREDIENTS FOR OUR BEANS
- Pinto Beans
- Large onion
- Salt Pork
HOW TO MAKE OUR SOUTHERN PINTO BEANS
Place Pinto Beans in a bowl and allow to soak overnight.
Drain the beans that have sit overnight.
We always fry up some Salt Bacon (Pork) with this for a couple reasons. We need the grease and we love the taste.
We always use the grease to put in with our beans for flavor.
Remove the cooked Salt Bacon and set aside.
Add 1 diced onion into the grease and allow to cook.
Place the drained beans back into the pot and cover beans with water.
Cook on medium heat for 3 hours until tender.

Soup Beans and Salt Pork

Ingredients
- 1 lb dry Pinto Beans
- 1 Onion diced
- 12 oz Salt Pork
Instructions
- Sort through beans removing stones, dirt and debris.
- Place beans in a dutch oven and fill with enough water to cover beans by several inches.
- Soak overnight.
- Pour beans into collander and set aside to drain.
- Place dutch oven on medium high heat.
- Rinse each piece of salt pork and place in dutch oven.
- Cook until pork has rendered off its fat and is crispy.
- Remove from pan and place on paper towel lined plate.
- Add diced onion to dutch oven. and cook until transparent.
- Add drained beans back to dutch oven and add enough water to cover by about 2 inches.
- Cover and cook on medium low for 5-6 hours until beans are soft enough to squeeze. If liquid gets to low add a little water or broth.
- Serve with cornbread.
