Homemade French Fries are a delectable treat when cooked in lard in a cast iron skillet. The perfect French Fry is both golden brown and firm. Their appearance and taste can make or break any meal.

Ingredients

  • 6 large Potatoes peeled
  • 2 lb Lard
  • Salt to taste

Instructions

  • Cut potatoes into ⅛"shoestrings.
  • Rinse and let sit covered in water for 15 minutes.
  • Drain and dry potatoes.
  • Heat lard in dutch oven over medium high heat to 375.
  • Par fry for 10 minutes.
  • Remove from oil and transfer to parchment paper sline baking sheet and dry.
  • Place in freezer for 30 minutes.
  • Heat oil back to around 375.
  • Fry for about 5-6 minutes.
  • Transfer to paper towel line plate and salt to taste.
