Butter Biscuits

Skillet Butter Biscuits are a fresh and tasty butter based southern flaky biscuit made in a cast iron skillet. This homemade butter biscuit is a fluffy layered buttery delight.

Ingredients

  • 2 ½ cup White Lily Self Rising Flour plus extra for kneading
  • 2 tbsp Sugar
  • 1 stick Butter frozen
  • 1 cup Milk cold
  • 4 tbsp melted Butter

Instructions

  • Grease 10" skillet and set aside.
  • Preheat oven to 425.
  • Place flour in a large bowl.
  • Add sugar and whisk until blended.
  • Using a box grater, grate butter into flour.
  • Mix until incorporated.
  • Create depression in middle and add cold milk.
  • Gently stir to combine.
  • When mixture starts to come together, use hand to combine and turn out on floured surface.
  • Work with hands to press down to about ½" thickness and then fold and repeat.
  • The number of time you do this process will determin how flaky biscuits will be.
  • Press down one final time to about ¾" thickness and, using glass or biscuit cutter, cut out biscuit and place in prepared skillet.
  • Gather up scraps and re-form to cut final biscuits.
  • Bake for about 10 minutes.
  • Pull out and brush tops with melted butter.
  • Bake another 5 minutes until browned on top.
  • Brush tops with melted butter again.
